Flourless Chocolate Cake

Ingredients

  • Dark chocolate (70%)200g
  • Unsalted butter100g
  • Eggs4
  • Sugar1/2 cup
  • Cocoa powder2 tbsp
  • Salt1/4 tsp
  • Heavy cream (for whipped topping)1/2 cup

Instructions

    Preheat oven to 180°C; grease a 20cm springform pan.

    Melt chocolate and butter together over a double boiler.

    Separate eggs; whisk yolks with sugar until pale.

    Fold chocolate mixture into yolks.

    Whip egg whites to stiff peaks; fold gently into batter.

    Pour into pan; bake 25–30 minutes until just set.

    Cool completely; center will sink slightly.

    Serve with softly whipped cream.
