  • Lasagna noodles9 sheets
  • Zucchini2
  • Red bell pepper2
  • Marinara sauce700g
  • Ricotta500g
  • Mozzarella (shredded)2 cups
  • Spinach2 cups
  • Parmesan1/2 cup
  • Egg1

Instructions

    Roast sliced zucchini and peppers at 200°C for 20 minutes.

    Mix ricotta, egg, spinach, and half the Parmesan.

    Spread marinara in a baking dish; layer noodles, vegetables, and ricotta.

    Repeat layers; top with mozzarella and remaining Parmesan.
